COYA Restaurant & Bar unveils a new sensorial chapter with the launch of its Global Bar Menu, an immersive exploration of Peru’s diverse landscapes, traditions, and flavours. COYA’s new Global Bar Menu will be introduced first at the Pisco Bar in COYA Dubai on 29 January, followed by COYA Abu Dhabi from 6 February, before travelling across COYA destinations worldwide, from Mayfair and Monte Carlo to Marbella and beyond.
Rooted in Latin America’s vibrant spirit and COYA’s deep connection to Peru, the new Global Bar Menu blends storytelling with contemporary mixology. At its heart is Camila de Quilla, a modern explorer retracing her heritage through Peru’s defining geographies. As she journeys across the country, each landscape reveals itself through evocative flavour profiles, textures, and aromas, transforming memories into cocktails that speak to the senses. Through her journal, Camila captures these discoveries and translates them into cocktails, honouring her lineage and her connection to COYA’s spirit and Peru’s heritage.
Camila begins along La Costa, Peru’s Pacific coastline, where the rhythm of the sea meets bright citrus and savoury depth. Cocktails such as La Mar, Agua de Chifa, Donna Luisa, and Chuno, the latter created exclusively for COYA Dubai, express sour and umami-led flavours inspired by coastal traditions. Rising into La Sierra, the Andean highlands unfold with bold, spicy, and spirited creations, including Arcoíris, La Rueda, Divino, and Earl of Agave, capturing the warmth, altitude, and strength of the mountains. The journey culminates in La Selva, the Amazon rainforest, where lush greenery, rainfall, and vitality come to life through herbal, fruity, and refreshing cocktails, including Tesoro del Campo, Coco y Choclo, Hay-Agua-Ska, and Hualo.
The Global Bar Menu features 12 alcoholic cocktails (nine global signatures plus three UAE exclusives—one per chapter), alongside four non-alcoholic cocktails crafted with the same creativity, balance, and attention to detail as the signature serves. At the heart of the experience are COYA’s iconic, homemade Pisco infusions, time-honoured expressions that celebrate Peru’s heritage and continue to shape the brand’s global identity. This inaugural Global Bar Menu marks the first chapter of an evolving annual series, with future editions set to reinterpret Peru through new narratives, ingredients, and creative perspectives, while remaining rooted in the spirit and legacy of the Pisco Bar.

The menu has been crafted by COYA’s UAE-based bar team, led by visionary Grégoire Schnerb, Head of Mixology, and Sany Bacsi, Global Bar Manager. Shaped by extensive research, multiple journeys through Peru, and a deep exploration of native ingredients and techniques, the Global Bar Menu is a poetic yet contemporary interpretation of Peru, designed to be discovered, shared, and experienced.
